1 graham cracker pie crust
1 box vanilla fat free or low fat pudding
8 oz cream cheese
4 oz whipping cream (or store bought whipped cream if you are short on time) (beat with a mixer on high about 10 minutes to make whipped cream).
1 lb organic strawberries, sliced
Make the pudding following directions EXCEPT substitute 8 oz (1/2 cup) of milk for the cream cheese. Pour into the pie crust and refrigerate at least 2 hours. Top with the sliced strawberries. On each individual plate, top with whipped cream. Serve and eat immediately.
